Ingredients:
- 1 tablespoon avocado oil
- 3 cloves garlic, minced
- 1 teaspoon grated ginger
- 1 pound boneless, skinless chicken breasts, sliced into strips
- 20 ounces frozen riced cauliflower
- 2 cups mixed frozen vegetables (broccoli, carrots, peas, etc.)
- 2 tablespoons soy sauce
- 1 teaspoon sriracha (optional)
- 1 teaspoon toasted sesame oil
- 1/4 cup chopped green onions
Instructions:
- Heat the oil in a large skillet or wok over medium-high heat. Add the garlic and ginger, and cook for 30 seconds, until fragrant.
- Add the chicken and cook for 5-7 minutes, or until golden brown and cooked through.
- Push the chicken to the side of the pan and add the frozen riced cauliflower and vegetables. Cook for 5-7 minutes, or until the vegetables are tender-crisp.
